Cashew Chicken


Ingredients:


1 10 3/4 oz can condensed golden mushroom soup
2 tbsp soy sauce
1/2 tsp ground ginger
1 1/2 lbs chicken tenders
1 c sliced fresh mushrooms or one 4 oz. can sliced mushrooms, drained
1 c sliced celery (2 stalks)
1 8-oz can sliced water chestnuts, drained
1/2 cup cashews
Hot cooked brown rice (optional)


Directions:


In a 3 1/2-4 quart slow cooker combine soup, soy sauce, and ginger. Stir in chicken tenders, mushrooms, celery, carrots, and water chesnuts. Cover and cook on low-heat setting for 6 to 8 hours or on high-heat for 3 to 4 hours. Stir cashews into chicken mixture. If desired, serve over hot rice.


Makes 6 Servings.

Chicken with Artichokes and Olives


Ingredients:


2 c sliced fresh mushrooms
1 14.5-oz can diced tomatoes, undrained
1 8- or 9-oz package frozen artichoke hearts
1 c chicken broth
1/2 c chopped onion (1 medium)
1/2 c sliced, pitted ripe olives or 1/4 c capers, drained
1/4 c dry white wine or chicken broth
3 tbsp quick-cooking tapioca
2-3 tsp curry powder
3/4 tsp dried thyme, crushed
1/4 tsp salt
1/4 tsp black pepper
1 1/2 lbs skinless, boneless chicken breast halves and/or thighs
Hot cooked brown rice (optional)


Directions:


In a 3 1/2-4 quart slow cooker combine the mushrooms, undrained tomatoes, frozen artichoke hearts, broth, onion, olives, and wine. Stir in tapioca, curry powder, thyme, salt, and pepper. Add chicken; spoon some of the tomato mixture over the chicken. Cover and cook on low-heat setting for 7-8 hours or on high-heat setting for 3 1/2-4 hours. If desired, serve with rice.

Easy Beef Steak with Mushrooms


Ingredients:


1 lb boneless beef round steak, cut 1″ thick
2 medium onions, sliced
2 4.5-oz jars whole mushrooms, drained
1 12-oz jar beef gravy
1/4 c dry red wine or apple juice


Directions:


Trim any fat from meat. Cut meat into 4 serving-size pieces. Place onion slices in a 3 1/2 or 4 quart slow cooker. Arrange mushrooms over onions; add meat. Stir together gravy and wine; pour over meat.

Sauerkraut and Pork Shoulder Roast


Ingredients:


1 14.5 oz can sauerkraut with caraway seeds, rinsed and drained
1 2.5 lb boneless pork shoulder roast or pork sirloin roast
salt
black pepper
2 tbsp creamy Dijon-style mustard blend
1 c beer or nonalcoholic beer


Directions:


Place sauerkraut in a 3.5 or 4-quart slow cooker. Trim fat from meat. If necessary, cut roast to fit into the slow cooker. Sprinkle lightly with salt and pepper. Spread mustard over meat. Place meat on top of the saurkraut. Add the beer. Cover and cook on low-heat setting for 8 to 10 hours or on high-heat setting for 4 to 5 hours. Transfer meat to a cutting board; cool lightly. Slice meat; discard fat. Serve sauerkraut with meat.
