Diabetic Recipes – Barbeque Sauce

Sweet and Tangy Barbeque Sauce
Ingredients:
1 tbsp canola or extra virgin olive oil
1 c onion, peeled and minced
2 garlic cloves, peeled and minced
2 low-sodium beef bouillon cubes
1/2 c hot water
3 cans (6-oz each) tomato paste
1 c SPLENDA® Granular
3/4 c Worcestershire sauce
3/4 c Dijon mustard
3 tbsp hickory-flavored liquid smoke
1 tsp salt
1/2 c cider vinegar
1 tbsp hot pepper sauce or to taste
Directions:
Place oil in large saucepan. Add onions and garlic. Saute over medium heat until translucent, 2 to 3 minutes. Mix bouillon and water. Add bouillon mixture and all remaining ingredients to saucepan. Stir well using wire whisk. Simmer uncovered 25 to 30 minutes; stir often. Chill overnight in nonreactive container to allow flavors to meld. Sauce is best if prepared 1 day before use. Keeps for 1 week, covered in refrigerator.
Makes About 6 Cups.
