Chicken Pecan Salad

Ingredients:

1 1/2 c cooked chicken, diced
2 big ribs celery, diced
1/4 medium, sweet red onion, diced
1/4 c chopped pecans
1/3 c mayonnaise (low fat)
Salt

Directions:

Toss the chicken, celery, onion, pecans, and mayonnaise together. Salt to taste and serve.

Makes 2 Servings.

Classic Egg Salad

Ingredients:

4 hard-boiled eggs, chopped
1 rib celery, diced
5 or 6 scallions, sliced
½ green pepper, diced
1/3 cup mayonnaise (low fat)
½ tsp prepared mustard

Combine all ingredients and serve on lettuce.

Makes 2 Servings.

Sloppy Jose

Ingredients:

1 lb ground beef
1 c salsa (mild, medium, or hot)
1 c shredded Mexican-style cheese

Directions:

In a large skillet, crumble and brown the ground beef, and drain off the fat. Stir in the salsa and cheese and heat until the cheese is melted.

Makes 4 Servings.

Cauliflower Kugel

Ingredients:

2 packages (10 oz each) frozen cauliflower, thawed
1 medium onion, chipped
1 c cottage cheese
1 c shredded cheddar cheese
4 eggs
1/2 tsp salt or Vege-Sal
1/4 tsp pepper
Paprika

Directions:

Preheat oven to 350 degrees. Chop the cauliflower into ½ inch pieces. Combine with the onion, cottage cheese, cheddar, eggs, salt, and pepper in a large mixing bowl, and mix very well. Spray an 8 x 8-inch baking pan with nonstick cooking spray and spread the cauliflower mixture evenly on the bottom. Sprinkle paprika lightly over the top and bake for 50 to 60 minutes or until the kugel is set and lightly browned.

Makes 9 Servings.
